Brekky Hash

This is a very satisfying breakfast that I often make for dinner! It all comes together beautifully and is a dish with variety that you can add whatever you have.

Recipe:

-6-8 large potatoes, washed and chopped small

-3-5 tablespoons olive oil

-salt, pepper, garlic powder, and paprika

-1-2 pounds of ground Italian pork, chicken, or beef sausage

-5-6 green onions, chopped

-1 egg (per person), poached or fried

-fresh chopped parsley

Instructions:

-Place the potatoes on a baking sheet and drizzle with olive oil and sprinkle salt, pepper, garlic powder and paprika on top. Bake in oven at 450 degrees for 40 minutes (or until potatoes are soft and crispy.)

-In a large skillet, drizzle some olive oil and add in ground sausage. Cook until browned.

-Fry or poach eggs for each person being served.

-Remove potatoes from oven and add into skillet with browned sausage and mix well.

-Scoop the Hash into bowls and top with fried or poached egg, green onions and fresh chopped parsley.
