Avocado Toast with Poached Egg

Whenever me and my husband have gone out to breakfast, we always say afterward “I like the breakfasts we make at home better.” We make good food at home so it’s hard to find restaurants that match the quality of the way we cook and the ingredients we use. One of our favorites that we make all the time is a simple avocado toast with a poached egg on top. It’s such a classic and gratifying breakfast.

How to poach an egg:

Fill a small saucepan halfway with water and bring to a boil. Crack the egg into the water while it is simmering. Set a timer for 3 minutes. After 3 minutes, remove the egg with a slotted spoon and place on a plate. You can put a paper towel under the egg to drain the excess water. Top with salt and pepper and voila!

Recipe:

1 egg, poached

1 piece of toast

1 avocado, mashed

1 tsp. bagel seasoning

a few sprigs of microgreens

Instructions:

Toast your bread, mash the avocado, and put the bagel seasoning in the avocado mash. Spread the mash on your toast, and put your poached egg on top. Place a few sprigs of microgreens on top your eggs and serve with fresh fruit.
